Mangoes Menthyankayee - Ingredients for the preparation of 1kg mangoes
Mango pieces (raw and sour) - 1Kg
Salt Powder - 150 gms to 200 gms
Methy Seeds - 50 dry-fried till red and powder
Turmeric Powder - 25 gms
Red chili powder - 150 to 200 gms
Asofatida powder - 25 gms
Method to the prepare Mangoes Menthyankayee (Menthikaya)
Cut mangoes to small cubes and add salt powder. Keep this preparation aside in a clean jar for 4 to 5 days, till they are cured, stir daily.
On the 6th day, add chili powder and the other ingredients together and mix with mango pieces.
Fill into another clean jar. Tie the mouth of the jar with a clean white thin cloth. Let it be in the jar for another two days and then start using it.
You can also use grated mango to prepare Grated Mango - Manthyan Kayee with the same method and ingredients. Instead of 1kg mango, it is advised to use 750 gm of grated mangoes in that preparation.
